This olive oil is produced in two of Crismona's factories in the province of Córdoba. It undergoes a special manufacturing process wherein great care is taken in its production. Healthy olives which are still green are selected, and this gives the olive oil its particularly fruity fragrance and taste. To maintain high quality throughout the entire production process, the temperature of the olive oil is never allowed to exceed 30º centigrade (ambient temperature). This process is known as "cold manufacturing" and ensures that both the organoleptic qualities and the vitamins remain practically intact.
